As rhythm guitarist in the strictest sense of the word, Scott Ian immediately comes to mind.
In a broader sense John Sykes, Jake E Lee, Gary Moore, Murray/Smith and Rory Gallagher are definitely worth a mention.
And let's not forget Ritchie Blackmore, Tony Iommi and Jimmy Page!
